Does anybody know if there is a limit to how many bank account one can open? I see the disclamers that the bank has the right to deny the application. Do they have some way of knowing how many bank account you have and how much money?

I do not think a bank can find out how many accounts you have. But they can find how many requests of your ChexSystems file have been made within a certain period. If you have more than three requests (e.g four) within a three-month period, many banks will not open a new account for you. So you are limited by four accounts per 3 months.
